Spiced Maple Leaf Cookies

These maple leaf cookies are a beautiful ode to autumn, with their delicate shape and warm, spiced flavour. The dough is enriched with maple syrup and ground cinnamon, giving each bite a subtle sweetness and a cozy depth. Soft yet crisp, these cookies are perfect for dipping into a mug of hot cider or enjoying with a blanket by the fire. Their lovely maple shape and earthy brown hue make them an eye-catching addition to any cookie platter, bringing the essence of fall to your table.
Ingredients:
- 250g plain flour
- ½ tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 125g unsalted butter, softened
- 100g soft brown sugar
- 60ml pure maple syrup
- 1 egg yolk
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 180°C (160°C fan) / 350°F. Line a baking tray with parchment paper.
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Cream butter and sugar: In a separate bowl, beat butter and brown sugar until light and fluffy. Add maple syrup, egg yolk, and vanilla; mix until smooth.
- Combine: Gradually add dry ingredients to the wet mixture. Mix until a soft dough forms. Wrap and chill for 30 minutes.
- Shape: Roll out dough on a floured surface to about 5mm thickness. Cut out leaf shapes using cookie cutters.
- Bake: Place cookies on the tray and bake for 10–12 minutes until edges are lightly golden. Cool on a wire rack.
