Rustic Pear Cake

The cake stood tall, each pear nestled inside like a secret kept in dough. Their stems reached upward, elegant and quiet, while the crumb around them baked into golden softness. A slice was served on a vintage plate, beside tulips and tea, as if the afternoon had paused just to admire it. It wasn’t just dessert — it was a moment of grace, a gentle offering, a reminder that beauty can be baked into the simplest things.
Ingredients:
- 200g plain flour
- 150g caster sugar
- 100g unsalted butter, softened
- 3 eggs
- 1 tsp baking powder
- ½ tsp ground cardamom or cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- 3–4 small ripe pears, peeled (leave stems intact)
- Optional: icing sugar for dusting
Instructions:
- Prepare the batter: Preheat oven to 180°C (160°C fan). Grease and line a loaf tin or tall round tin. Beat butter and sugar until light. Add eggs one at a time, then vanilla.
- Add dry ingredients: Sift in flour, baking powder, salt, and spice. Fold gently until smooth.
- Arrange pears: Pour batter into tin. Gently press whole pears upright into the batter, spaced evenly.
- Bake: Bake for 45–55 minutes, until golden and a skewer comes out clean near the edge (avoid piercing pears).
- Cool and serve: Let cool slightly. Dust with icing sugar. Serve warm or at room temperature with tea or crème fraîche.
