Rustic Fig & Apple Tart

This tart is a celebration of autumn’s bounty — buttery, flaky pastry cradling tender slices of apple and fresh figs, gently baked until golden and fragrant. A drizzle of honey and a touch of cinnamon bring warmth and depth, while the rustic shape and caramelised edges evoke the charm of countryside baking. It’s simple, seasonal, and perfect for slow afternoons with tea, flickering candles, and soft conversation.

Ingredients:

  • 180g plain flour
  • 2 tbsp sugar
  • Pinch of salt
  • 100g cold unsalted butter
  • 1 egg yolk
  • 2–3 tbsp cold water
  • 2 apples, thinly sliced
  • 4–5 fresh figs, sliced
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • ½ tsp ground cinnamon
  • 1 tbsp butter (for dotting)
  • Optional: crème fraîche, whipped cream, or maple syrup for serving

Instructions:

To prepare the pastry, begin by mixing flour, sugar, and salt in a bowl. Add cold butter and rub it in with your fingertips until the mixture resembles coarse crumbs. Stir in the egg yolk and a splash of water, then gently knead the dough until it comes together. Wrap and chill for 30 minutes. Meanwhile, toss sliced apples and figs with lemon juice, honey, and cinnamon, then set the filling aside. Once the dough is chilled, roll it out into a rough circle about 30 cm wide and transfer it to a sheet of parchment paper. Arrange the fruit in the centre, leaving a 4–5 cm border, and fold the edges inward to create a rustic crust. Dot the fruit with small pieces of butter, then bake at 180°C (160°C fan) or 350°F for 35–40 minutes, until the crust is golden and the filling is bubbling. Let the tart cool slightly before serving warm or at room temperature, accompanied by crème fraîche, whipped cream, or a drizzle of maple syrup.
