The golden leaves outside seem to echo the colours of cinnamon, nutmeg, and caramelised sugar, while the cool evenings call for something sweet and homemade to share with friends or enjoy quietly with a cup of tea.

This cake is inspired by the heart of the season — simple ingredients, rich flavours, and that unmistakable autumn coziness. It’s the kind of bake that fills the house with a fragrance so comforting, you’ll want to linger by the oven just to breathe it in. Whether you’re hosting a gathering, celebrating the harvest season, or simply treating yourself after a long walk through crunchy leaves, this recipe captures the essence of fall in every slice.

Ingredients:

  • 250 g (2 cups) plain flour
  • 200 g (1 cup) light brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ÂĽ tsp ground cloves
  • Pinch of salt
  • 2 large eggs
  • 180 ml (Âľ cup) vegetable oil (or melted butter)
  • 200 g (about 1 cup) pumpkin purĂ©e (homemade or canned)
  • 1 tsp vanilla extract

Instructions:

Preheat oven to 175°C (350°F). Grease and line a loaf tin (approx. 22 × 12 cm).

  • Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, spices, and salt.
  • Mix wet ingredients: In another bowl, whisk eggs, oil, pumpkin purĂ©e, and vanilla until smooth.
  • Combine: Pour wet mixture into dry ingredients and stir gently until just combined (don’t overmix).
  • Bake: Transfer batter into the loaf tin and bake for 45–50 minutes, or until a skewer inserted in the centre comes out clean.
  • Cool & serve: Let cool in the tin for 10 minutes, then transfer to a wire rack.

🍂 Serving idea

Drizzle with a simple glaze (icing sugar + milk + pinch of cinnamon).

Or serve warm with cream cheese frosting for extra indulgence.
