Fruit Tea Cake with Berries & Cream

The cake had already been sliced — a quiet sign that someone couldn’t resist. Berry-stained crumbs dotted the plate, and the teacup beside it still held warmth. A knitted cloth, a porcelain dzbanek, and a single hydrangea in bloom made the table feel like a memory. It wasn’t a grand dessert, but it didn’t need to be. It was soft, sweet, and familiar — the kind of cake you make when guests are coming, or when you simply want the afternoon to feel like a pause.
Ingredients:
- 200g plain flour
- 150g caster sugar
- 100g unsalted butter, softened
- 3 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 100g mixed berries (fresh or frozen)
- 2 tbsp plain yogurt or sour cream
- Pinch of salt
- Optional: icing sugar for dusting
Instructions:
- Prepare the batter: Preheat oven to 180°C (160°C fan). Grease and line a 20cm round tin. Beat butter and sugar until light. Add eggs one at a time, then vanilla and yogurt.
- Add dry ingredients: Sift in flour, baking powder, and salt. Fold gently until smooth. Stir in berries.
- Bake: Pour into tin and smooth the top. Bake for 35–40 minutes until golden and a skewer comes out clean.
- Cool and serve: Let cool slightly. Dust with icing sugar. Serve with tea, soft cloths, and quiet company.
