Chocolate Spice Bundt Cake

This chocolate spice bundt cake is a winter classic, rich with warm spices and deep cocoa flavour. The cake’s soft crumb is delicately spiced with cinnamon, ginger, and nutmeg, creating a cozy backdrop for the glossy dark chocolate glaze. Adorned with a sprinkle of pearl sugar, it becomes a stunning centrepiece for any holiday table. Easy to make but full of festive warmth, this cake is perfect for sharing with loved ones, whether by the glow of a candlelit dinner or a twinkling Christmas tree.
Ingredients:
For the cake:
- 250g plain flour
- 50g cocoa powder
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 200g soft brown sugar
- 150g unsalted butter, softened
- 3 large eggs
- 200ml sour cream or plain yogurt
- 1 tsp vanilla extract
For the glaze:
- 100g dark chocolate
- 2 tbsp butter
- 2 tbsp maple syrup or golden syrup
- Pearl sugar or icing sugar for decoration
Instructions:
- Preheat oven to 180°C (160°C fan) / 350°F. Grease and flour a bundt tin.
- Mix dry ingredients: In a bowl, whisk together flour, cocoa, baking powder, baking soda, spices, and salt.
- Cream butter and sugar: Beat butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each.
- Add wet ingredients: Stir in sour cream and vanilla. Gradually fold in dry ingredients until just combined.
- Bake: Pour batter into the prepared tin and smooth the top. Bake for 40–45 minutes or until a skewer comes out clean. Cool in the tin for 10 minutes, then turn out onto a wire rack.
- Make glaze: Melt chocolate, butter, and syrup in a bowl over simmering water. Stir until smooth.
- Decorate: Drizzle glaze over cooled cake and sprinkle with pearl sugar or icing sugar.
